Authentic Chinese Sichuan food by chef Xinyu from Rotterdam
Mouth-watering chicken: 口水鸡
Ingredients: chicken legs, spring onion, coriander ice cube, soy sauce, ginger, garlic, peanut butter. Sichuan peppers, Sichuan peppers powder., sesame oil, sesame, deep fried/ fried peanut , Sichuan chili , Sichuan chili powder.
Preparing the chicken leg: remove the blood part and fat
Then boil the water, put the white part of the spring onion
and sliced ginger into the water and one small tea spoon of salt. Once the
water is boiling with the highest fire, then put the chicken inside to cook
15-30 mins, it depends on how tender of the meat you would like to eat. Then
turn off the fire. Put the cover back to the pot. Leave the chicken inside the
pot for 10 mins.
Then take out the chicken leg, put inside the cold water
with ice cube this way will make the meat to be tasted more tender. Don’t throw away the chicken soup, we can still use it for making the sauce, or cooking for other dishes.
Sauce preparing: 1. Chili sauce: chili powder, Sichuan
peppers inside the bowls. Then pour the
heated oil inside the bowl of chili powder and Sichuan peppers.
2. chop the ginger,
garlic, and spring onion.
3. put the chili sauce with chopped ginger, garlic and
spring onion, add salt, Sichuan pepper powders, Chinese vinegar, soy sauce.,
sugar, sesame oil, then add the peanut butter.
4. chop the chicken leg, put in the plate.
5. Then pour the sauce on top of the chicken leg, chop some coriander,
and chopped fried peanuts for decoration.
